VEGETABLE RECIPE:
Sweet & Sour Red Cabbage

1-medium red cabbage about 2 1/2 lbs
3/4 cup boiling water
3-apples, pared, cored and sliced (Granny Smith)
3-tbsp butter
1/4-cup packed brown sugar
2-tsp flour
1/2-tsp salt
1/2-tsp black pepper
1/4-cup balsamic vinegar


Quarter cabbage and wash in cold water
Drain well and shred coarsely
In a large pot with the boiling water, add the cabbage, cover and cook 10-15 minutes
Add apples
Cover and simmer until cabbage and apples are tender
Add butter
Mix together the brown sugar, flour, salt and pepper; add in the vinegar
Stir into cabbage
Stir until mixture boils and softens

Makes 5-6 servings
