RECIPE: Zucchini with Peppers
1-small zucchini
1/4-red pepper, cut on diagonal
1/4-cup diced onion (or julienned)
1-tsp minced garlic
1-tsp Italian seasoning
Salt & pepper to taste
Romano cheese
1 to 2-tbsp olive oil
Cut zucchini in half lengthwise
Cut each half into 1/2" thick half moons
Sauté all ingredients except cheese in olive oil coated pan over medium-high heat for 3-5 minutes
Grate fresh Romano cheese over all and remove from heat
Allow to melt, and serve
