SOUP
RECIPE: Salmon & Vegetable Soup
1-tbsp butter
1/2-cup chopped onion
1-clove garlic, minced
1/4-tsp thyme
1/4-tsp basil
1-10 oz can condensed chicken broth
1-cup peeled, diced potatoes
1/2- cup corn niblets
1/2- cup diced zucchini
1/2- cup carrots
2-cups 1% milk
1/2-lb uncooked salmon fillet cut in small chunks
1/2-cup cheddar cheese
In a heavy saucepan, sauté garlic, herbs and onions in butter until transparent
Add undiluted broth and all vegetables
Simmer uncovered until vegetables are cooked
Add milk and salmon
Simmer until salmon is opaque and flakes easily with a fork; do not boil
Season to taste
Sprinkle individual bowls with cheese and serve immediately
Makes 4 servings.
