SOUP RECIPE:
Hearty
Minestrone With Shells
3 slices chopped bacon
1 onion, chopped
1 carrot, chopped
1 stalk celery, chopped
1-1/2 cups chopped cabbage
4 cups water
3 cans (10 oz) chicken broth
1 can (19oz) tomatoes (chopped)
3/4-cup mini shells
1 can (14oz) red or white kidney beans, drained
3 cloves garlic
2 tbsp chopped Italian parsley
Grated Parmesan
In large saucepan, cook bacon until crisp
Add onion, carrot, celery, & cabbage
Cook (stir) for 5 min
Stir in water, broth, & tomatoes with liquid
Bring to boil, reduce heat & simmer covered 15 min
Stir in shells & cook uncovered 15 min more
Stir beans, garlic, & parsley into soup
Heat through
Serve topped with cheese
