RECIPE:
Easy Creamy Vegetable
Soup
1-onion chopped
4-cups low salt chicken stock
3-4 cups frozen mixed vegetables
2-small potatoes, chopped
1/2-cup Cheez Whiz (optional) |

Spray large saucepan with cooking spray
Add onion and sauté over medium heat for about 7 minutes or until
tender, stirring occasionally
Add in the broth; bring to a boil
Add frozen vegetables and potatoes
Reduce heat to medium-low; simmer 10 minutes or until vegetables are
tender
Gently mash the vegetables with a potato masher until desired
consistency
If using, add in the Cheez Whiz and cook another 2 minutes or until
fully melted
Makes 4 servings MORE SOUP
