Soft Pretzels

1-package (1-tbsp) active dry yeast
1 -cup warm water
1-tbsp sugar
-tsp salt
4-4 -cups flour
2-tbsp coarse salt

Preheat oven to 425*
Grease several large baking sheets with shortening
Sprinkle yeast over warm water in a large bowl
Stir with a rubber spatula to dissolve
Stir in -tsp salt and sugar
Using a wooden spoon, gradually add 4-cups of flour to liquid mixture in bowl
Stir until mixture forms a stiff dough
It will form a dough ball and stick to spoon as you stir
Using the last -cup of flour, sprinkle the counter
Place dough onto floured counter and knead 5-7 minutes
The dough should be smooth and elastic
Divide dough into 16 equal pieces
Let dough rest 5-10 minutes
Roll each piece into 12” rope
Shape into a pretzel
Place on baking sheets
Beat 1-egg with 1-tbsp water
Brush onto the pretzels
Sprinkle on the coarse salt
Bake 15-20 minutes or until golden
Serve warm or cold, and with mustard
