SNACK RECIPES: Guacamole


2-medium avocados
3-tbsp fresh lime juice
1-tbsp fresh lemon juice
3-cloves of garlic, finely minced
2-scallions, finely minced
1-medium tomato, diced & seeded
5-pickled jalapeno peppers, minced
1-tsp chipotle chili powder (or regular chili powder)
2-sprigs of fresh coriander, finely chopped, optional (or 1/2-tsp seed)
1-tsp salt
1/2-tsp freshly ground black pepper


Peel and pit the avocados
Add all ingredients to food processor and puree
Serve freshly made with corn chips or tortilla chips
