SNACK RECIPE:
Chipotle-Cheddar Refried Bean Dip

3-tbsp canola oil
1-small red onion, diced
1-jalapeno, diced
1/2-tbsp salt
1-14oz can diced tomatoes
1-16oz can refried beans
1/2 of 7-oz can chipotles in adobo sauce
2-cup shredded cheddar cheese
Juice of 1/2 lime
1/2-cup chopped cilantro


In a 4-quart pot over medium heat, warm oil
Add onion, jalapeno and salt; cook 5 minutes
Add tomatoes, refried beans, chipotles and cheese; stir
Cook 5 minutes stirring until combined and cheese is melted
Add limejuice and cilantro
Serve warm
