SLOW COOKER RECIPE:
Scalloped Potatoes

¼-cup butter
1-small onion, diced
¼-cup all-purpose flour
1-tsp salt
½-tsp pepper
½-tsp dried thyme
2 ½-cups milk
1-cup shredded Gruyere or Swiss cheese
1-tbsp dried parsley
6-Yukon gold potatoes, peeled and thinly sliced
½-cup chopped cooked ham or cooked turkey


In a heavy saucepan, melt the butter over medium heat
Fry the onion, stirring occasionally until soft, about 5 minutes
Add flour, salt, pepper, and thyme
Cook, stirring for 1 minute
Gradually stir in the milk and bring to a boil
Cook, stirring for 5-8 minutes or until thickened
Stir in ½ of the cheese and ½ of the parsley
Add the potatoes and ham; stir to coat
Scrape into slow cooker
Sprinkle with remaining cheese and parsley
Cover and cook on low for 6 hours or until potatoes are tender and sauce is bubbly
