3-tbsp oil
1/4 onion
2-cups chicken broth
1-diced carrot
1 tomato
1-cup rice
1/4 bell pepper
1/2-cup green peas
In a large skillet, sauté tomato, bell pepper, onion and rice in hot oil
Stir until rice begins to brown
Add chicken stock
Bring to a boil
Add carrots and peas
Cover
Reduce heat to medium-low
Simmer until done (15-20 minutes)
Serve
