SIDE DISH RECIPE:
Smashed Potatoes with Garlic & Romano 


1 1/2-lbs baby red potatoes, skins on
1/2-cup ricotta cheese
1/4-cup margarine
2-green onions, finely chopped
3-cloves garlic, minced
Salt and pepper to taste
1/4-cup grated Romano (Tre Stella, Kraft)
Milk to make creamy


Place potatoes in a large saucepan and cover with water
Bring to a boil, reduce heat and cook until tender, about 20 minutes
Drain potatoes and return to stove-top to remove excess moisture
Add the ricotta, margarine, green onions, and garlic
With a masher, mash to desired chunky texture, adding enough milk to make creamy
Add in the Romano
Season to taste with salt and pepper
