SIDE DISH RECIPE:
Nasi Goreng
(Indonesian Fried Rice)


3/4-lb trimmed pork shoulder, cut into bite-sized pieces
5-oz salad shrimp
4-cups boiled rice, cooked in salt water, drained and dried (about 1 1/2-cups raw)
2-cloves garlic, minced
1-medium onion, diced
2-ribs celery, sliced
2-cups white cabbage, shredded
1/2-green pepper, diced
1/2-red pepper, diced
1-tbsp Sambal Oelek
2-tsp fresh ginger, grated
1-tbsp curry powder
Vegetable oil for frying
2-eggs, slightly beaten
Pepper


Season pork with salt and pepper
In a large fry pan or wok, fry the pork
Remove the pork and set aside
In the same pan, over high heat, sauté the onion for 3 minutes and the add the garlic and sauté one additional minute
Add the sambal, ginger, and curry powder
Sauté for 2 minutes
Add the celery, peppers, and cabbage and cook for 3 minutes more
Add the shrimp and rice, heat on top of stove until all is hot
Add pork and place all in a 350* preheated oven; cook uncovered for 20 minutes
Meanwhile, fry the slightly beaten eggs, seasoned with pepper as an omelet, cut into strips
To serve, heap the rice on a platter and top with strips of the omelet
