SIDE DISH RECIPE:
Risotto With Mushrooms

2-cups Arborio rice
3-tbsp butter
3-cups chicken broth
1/2-cup chopped onion
Salt to taste
Grated Parmesan cheese
10oz. can of mushrooms
1/2-cup dry white wine


Sauté onion in 2 -tbsp butter, until brown
Add rice and broth
When rice begins to boil, add salt and mushrooms
Cover and simmer for 20 minutes
Stir in cheese, butter and wine
Serve
