SIDE DISH RECIPE:
Italian Bean and Pasta Salad
1-cup small pasta shells
1-19oz can of mixed beans, drained and rinsed
1/2-cup red pepper, slivered
1/2-cup green pepper, slivered
1/3-cup feta cheese, crumbled
1/4-cup red onion, diced
3-tbsp olive oil
3-tbsp lemon juice
11/2-tsp dried oregano
1/2-tsp salt
1/4-tsp pepper
Cook shells according to directions on package
Drain and cool under cold water; let drain well
Place in a large bowl
Add beans, peppers, cheese and onion
In a jar with a tight fitting lid, combine the remaining ingredients
Shake well to blend
Pour over salad and toss to coat
Cover and chill 1 hour or over night
