SIDE DISH RECIPE:
Garlic Lover's Baked Potatoes
2-heads of garlic
4-tbsp olive oil

4-large baking potatoes
2-tbsp olive oil
Salt and pepper to taste

Garlic Potatoes and Souvlaki


Preheat oven to 350*F
Slice about 1/4" off the top of each garlic head and discard
Place the heads in garlic roaster, small baking dish, ovenproof sauté pan, or on aluminium foil
Drizzle the 4-tbsp of oil over the 2 heads
Cover (wrap the foil around heads if using foil)

Roast until soft, about 40-50 minutes
When cool, squeeze out softened cloves and make into paste
Add salt, pepper, and 2-tbsp of olive oil
Slice the potatoes 1" apart, keeping the pieces inline
Spread the paste over the potato slices
Re-assemble the potato, sprinkling more salt, pepper, and a drizzle of olive oil
Wrap in aluminium foil
Bake @ 475* for 1-hour to 1 1/4-hour depending on the size of the potato
