SIDE DISH RECIPE:
Black Bean Fiesta Salad

1-19oz can black beans, rinsed
1-cup frozen corn, thawed
1-yellow pepper, diced
1-red pepper, diced
1-cup diced red onion
2-celery ribs, diced
3/4-cup cubed Monterrey Jack cheese

3-tbsp lemon juice
3-tbsp red wine vinegar
2-tbsp olive oil
2-garlic cloves, minced
1-tbsp Italian seasoning
1-tsp pepper
1/2-tsp cumin


In large bowl, combine the first 7 ingredients
Combine remaining ingredient in a jar with a tight fitting lid
Shake well
Pour over veggies and mix well
Cover and chill 2 hours or overnight
