DISH RECIPE:
Arroz Verde (Green Rice)
1-small white onion, peeled & quartered
3-cloves garlic, peeled
2-poblano chiles, stemmed, seeded, de-veined and quartered
1-cup fresh cilantro leaves
2-cups chicken stock
Salt & freshly ground black pepper
1-cup long grain white rice
2-tbsp vegetable oil
Put onions, garlic, chiles, cilantro and 1-cup of chicken stock into a blender
Blend, strain into a bowl and season with salt & pepper to taste
Rinse & drain rice
Heat oil in a heavy pot over medium-high heat
Add rice and cook, stirring constantly for 2 minutes
Add sauce and remaining stock
Cover and simmer for 20 minutes
Remove pot from heat and keep covered
Allow rice to steam for 10 minutes
