SEAFOOD RECIPE:
Spice Rubbed Salmon

2-tbsp coriander seeds
2-tbsp mustard seeds
1-tbsp granulated sugar
2-tsp sea salt
1/2-tsp cracked pepper
4-skinless salmon fillets
2-tbsp olive oil


In a coffee grinder or mortar and pestle, coarsely grind coriander and mustard seeds
On a plate, mix together the spice mixture with the sugar, salt & pepper
Coat salmon with spice mixture; let stand 15 minutes to infuse flavours
In an ovenproof non-stick skillet, heat oil over medium heat
Brown fillets 1 to 2 minutes being careful not to burn spice crust
Bake in a 450*F oven for about 5 to 8 minutes or until desired doneness
