SEAFOOD RECIPE: Scallops In Wine


2 lbs scallops
2 cups white wine
1/4-cup butter
1/4-cup shallots (fine chopped)
24 mushroom caps (finely sliced)
2 tbsp. parsley
2 tbsp. flour
2-4 tbsp. whipping cream
1/2 -1 cup breadcrumbs
Butter


Wash scallops
Simmer in wine for 5 minutes
Drain & reserve liquid
Melt butter
Sauté shallots, mushrooms & parsley
Stir in flour
Add reserved liquid & whipping cream
Cook until slightly thick
Stir in scallops
Place in greased shallow casserole dish
Top with breadcrumbs & dot of butter
Broil until lightly brown
