RECIPE: Mussels
With Mustard Sauce
2 lbs. Mussels
2 cloves garlic, chopped
1/2tsp. Black pepper
1tsp.olive oil
1/2cup dry red wine
1/2cup chopped parsley
Mustard sauce
Mustard sauce
1/2cup plain non-fat yogurt
2tbsp. Dijon mustard
1tbsp. Low-fat sour cream
1tsp. Honey
Heat all, stirring occasionally, just till hot
Clean mussels.
Cook garlic & pepper in oil in Dutch oven, stirring frequently, until garlic is
softened.
Add wine, mussels & parsley.
Cover & heat to boiling; reduce heat.
Simmer 5 to 10 min. or until mussels open
Stir to coat with liquid.
Prepare mustard sauce
Serve with mussels
