SEAFOOD RECIPE:
Creole Fish Stew


1-lb fish fillets
1/2-lb frozen cooked shrimp
2-tbsp vegetable oil
2-cloves garlic, minced
1-onion, cut into sections
12-large mushrooms, halved
1-green pepper, coarsely diced
3-carrots, thinly sliced
2-small zucchini, diced
1-28oz can tomatoes
1/2-tsp thyme
1-tsp basil
1/4-tsp crushed chilies


De-bone fish
Thaw shrimp and set aside
In a large saucepan, heat oil and sauté garlic, onion, mushroom and green pepper for 5 minutes
Add carrots, zucchini, tomatoes and seasonings
Bring to a boil. Reduce heat and simmer for 15 minutes, stirring occasionally
Add fish and cook uncovered for 5 minutes
Add shrimp and heat, stirring occasionally

Makes 4-6 servings
