SEAFOOD RECIPE: Cajun-Style Blackened Halibut


1-tsp salt
1-tsp minced fresh thyme
1/2-tsp chili powder
1/2-tsp onion powder
1/2-tsp dried oregano
1/2-tsp cayenne pepper
1/2-tsp sweet paprika
1/2-tsp ground black pepper
1/2-tsp fennel seeds, crushed
1/2-tbsp garlic powder

4-6oz. halibut fillets
2-tbsp olive oil

4-tsp butter


Preheat oven to 400*F
Mix first 10 ingredients in a small bowl
Place fillets on a baking sheet
Brush both sides with 1-tbsp oil
Sprinkle each with seasoning
Heat heavy large skillet (preferably cast-iron) over high heat until very hot
Add remaining 1-tbsp olive oil and swirl to coat
Place fillets in skillet
Cook until very brown on bottom, 1 minute
Return fillets to baking sheet with browned side up
Place in oven and bake until just opaque in centre, about 8 minutes
Top each with 1-tsp butter

Makes 4 servings

HINT
::: This will get very smokey in your kitchen. To avoid the smoke, fire up the barbeque and cook it outside. Just put your cast-iron skillet on the grill for the first part, then instead of baking in the oven, toss them on the grill!
