SAUSAGE MAKING RECIPE:
Greek Sausage


5-lbs ground pork
3/4-lb feta cheese, crumbled
1-bunch of fresh Italian parsley, finely chopped
6 1/2-oz kalamata olives, chopped
1-tbsp dried oregano
1-tbsp anise
1-tbsp coarse black pepper
1-tbsp salt
1-tbsp ground coriander
1-tbsp fresh garlic, minced
3/4-cup dry white wine

Mix all seasonings together with wine
Mix the seasonings with the ground meat and cheese
Stuff into casings
