SAUSAGE
MAKING RECIPE:
Beef and Pork Chorizo
2/3-lb lean ground beef
1 1/3-lb lean ground pork
1/3-cup finely diced salt pork
1/3-cup dry red wine
2-cloves garlic, minced
1-tbsp paprika
¾-tsp salt
1-tsp coriander
½-tsp nutmeg
½-tsp white pepper
1/8-tsp cayenne
1/8-tsp ground cloves |

In a large bowl, combine the wine, garlic, paprika, salt, coriander, nutmeg, pepper, cayenne and cloves; whisk to combine
Add salt pork and let marinate for 30-60 minutes
Mix in beef and pork
Cover and refrigerate for at least a day and up to 3 days
Shape into 8 patties or stuff into hog casings
