PASTA RECIPE: Herb
Butter Pasta
1/4cup butter
2tbsp. chopped fresh parsley
2tbsp. Chopped. Fresh basil or 2tsp. Dried
1tbsp. Lemon juice
1 green onion, chopped
1/2tsp. Grated lemon rind
3/4cup low-fat cottage cheese
1/2cup-grated Parmesan
1 lb. Spinach noodles
Salt & pepper
Grated Parmesan cheese to serve
In food processor, process butter, parsley, basil, lemon juice, green onion & lemon
rind until smooth
Add cottage cheese & Parmesan
Process just till combined
Transfer to medium bowl
Cook pasta
Drain well
Add sauce & toss well.
Season with salt & pepper.
Serve with grated Parmesan
Sauce will keep several days in fridge, ready for an instant pasta supper.
