PASTA RECIPE: Creamy Basil Chicken
1 1/2-lbs boneless chicken breasts, cubed
1 1/3-cups green onion, finely chopped
1-lb fresh mushrooms, sliced
2-tbsp vegetable oil
1/2-cup butter or margarine
1/4-cup flour
2-cup chicken broth
1-cup whipping cream
2-tbsp fresh basil, finely chopped
1/4-tsp white pepper
Hot cooked fettuccine
In a skillet, sauté chicken, onions, and mushrooms in oil until chicken is no longer pink
Meanwhile, in a large saucepan, melt butter
Gradually add flour and stir until smooth
Gradually add broth and cream
Stir in basil and pepper
Bring to a boil: cook and stir for 2 minutes until thickened
Stir in chicken mixture
Serve over fettuccine
Makes 6-8 servings
