PASTA RECIPE: Chicken
Alfredo With Pesto
6-tbsp butter
2/3-cup cream
6-tbsp grated Romano cheese
Salt, & pepper to taste
Parsley (optional)
2-chicken breasts, cubed
1-2 tbsp chopped sun dried tomatoes
1-2 tbsp pesto (see pesto recipe)
Pasta of your choice (1-lb dry serves 4)
Melt 1-tbsp butter in skillet
Add cubed chicken and cook until done
Add tomatoes
Add remaining butter & cream
Stir over low heat until well combined
Add pesto, then cheese, salt & pepper to taste
Add cooked pasta and combine well
May need to add a little cream to thin
Serves 4
