MAIN DISH RECIPE:
Turkey Fiesta Casserole

3-cups chicken broth
2-cups instant rice
2-cups frozen corn, thawed
1-19oz can black beans, rinsed
1 1/2-cups salsa
1-tbsp Tabasco
3-cups shredded cooked turkey
8-oz sharp cheddar cheese, shredded
6-oz Fritos, crushed to coarse crumbs


Adjust rack in oven to middle position
Heat oven to 450*F
Combine the broth, rice, corn, black beans, salsa, and Tabasco
Pout mixture into a 9x13 inch baking dish
Bake for 15 minutes
Stir in the turkey into the baking dish
Sprinkle the cheese evenly over the top
Sprinkle the Fritos over the top of the cheese
Continue to bake until the edges are bubbling and the crumbs are toasted, 8-12 minutes longer
