MAIN DISH RECIPE: Thai Curried Meatballs

1-14oz can coconut milk
1-tbsp Thai green, or mild red curry paste
2-carrots, sliced
1-onion, sliced lengthwise
1/2-tsp salt
2-cups chopped broccoli
1-can baby corn, drained and rinsed
2-tbsp chopped fresh cilantro (can use fresh basil)
1-tbsp limejuice
1-lb cooked basic meatballs
The coconut milk adds such a rich flavour to this dish that just doesn't show up in this picture

In a shallow saucepan, bring coconut milk, curry past, and 1/2-cup of water to a boil, whisking often
Add carrots, onion, and salt
Reduce heat and simmer for 10 minutes
Add meatballs and simmer for 5 minutes
Add broccoli and corn; simmer 5 minutes or until tender crisp
Add basil and lime juice; simmer 30 seconds
Serve over rice

Makes 4 servings
