MAIN DISH RECIPE:
Soft Tacos

1/2-cup vegetable oil
11/2-tbsp chopped garlic
1/4-tsp ground cumin
Juice of 1 1/2-limes
Salt & pepper to taste
Oil for brushing the pan
3-medium chicken breasts, sliced
5-slices bacon, large dice
1-red onion, sliced
2-poblano peppers
2-red bell peppers
1-green bell pepper
Grated mozzarella cheese to taste


Taco filling
12-corn tortillas (5-inch), medium thickness
1 1/2-cups tomato salsa
1 1/2-cups guacamole
1 1/2-cups red onions, sliced or diced
1-bunch fresh coriander, leaves left whole or chopped
Lime wedges


In a measuring cup whisk together the vegetable oil, chopped garlic, cumin, and limejuice
Preheat a heavy bottom no-stick pan or cast iron pan over medium-high heat
Brush pan with a little oil
Season chicken with salt and pepper
Toss in a little vegetable oil
Add chicken to pan, sauté for 2-3 minutes or until chicken loses some of it's rawness
Add the bacon and continue to sauté for 1-2 minutes
Brush pan with oil if needed
Add the onions and peppers and continue to sauté for 1-2 minutes
Cook until chicken is cooked through and the bacon is crisp
Add the ingredients from the measuring cup to taste
Sprinkle the grated mozzarella cheese over the chicken mixture
Assemble with corn tortillas and your favourite toppings at the table

Assembly
Warm the tortillas until soft and hot over a sauté pan or cast iron pan
Serve at the table with bowls of the taco filling, salsa, guacamole, onion, coriander and lime wedges
