Easy Salsa Cheddar Chicken
A splash of vegetable oil
4-boneless, skinless chicken breasts
1 to 1 1/2-cups salsa
1 to 1 1/2-cups grated cheddar cheese
Garlic powder
Chipotle powder (or chile powder, or Mrs. Dash Southwest Chipotle)
Easy Salsa Chicken

Preheat oven to 375°F
Season chicken with garlic powder and chipotle powder
Heat a large sauté pan over medium-high heat
Add oil and when it just starts to smoke, add chicken
Sear it until it is well browned, flip and sear the other side
Place browned chicken in a 9" x 13" baking pan
Spoon the salsa over the breasts
Sprinkle the cheddar over top and bake for 15-20 minutes until chicken is cooked through and cheese has melted
