Easy Pesto Chicken for 2


1-tbsp vegetable oil
½-large onion, sliced
3-slices bacon, cut into square pieces
½-red bell pepper, sliced
2-boneless, skinless chicken breasts, cut into chunks
1-cup baby spinach leaves
¾-cup cherry tomatoes, halved
¼-cup whipping cream
1-tbsp basil pesto


Heat the oil in a large skillet
Add the onions and bacon and cook for 5 minutes, tossing to cook all sides
Add the chicken and cook for 10 minutes, turning to cook all sides
Add the red peppers and cook for 5 minutes
Stir in the tomatoes and cook for 2 minutes
Pour in the whipping cream and pesto, stir to mix well
Add the spinach and cook until just wilted
