MAIN DISH RECIPE:
Chipotle Chicken Chimichangas
 
Boneless, skinless chicken breast or thighs
Garlic powder
Chipotle powder (or Cayenne pepper)
Adobo sauce

Black beans, rinsed and drained
Shredded lettuce
Monterey Jack cheese, shredded
Salsa Roja,or salsa of choice
Cherry tomatoes, chopped in half
Guacamole
Flour tortillas
Vegetable oil
Chipotle Chicken Chimichangas

Chop chicken into 1" chunks
Season with garlic powder and chipotle powder (or cayenne pepper)
Fry in vegetable oil
Add 2-tbsp adobo sauce and stir to coat

Microwave the tortillas until just warm to make soft for wrapping
Assemble with a little of each remaining ingredient
Roll the tortillas, tucking in the ends to prevent the filling from coming out
Heat 1-tbsp of vegetable oil in a frying pan over medium heat
Quickly fry the Chimichangas on all sides to lightly brown
