MAIN DISH RECIPE:
Black Bean Burritos


1-cup black beans, rinsed
3/4-cup corn niblets
3/4-cup prepared salsa
1/4-cup fresh coriander, chopped
2-tbsp jalapeno peppers, chopped
1 1/4-cup cheddar cheese, shredded
10-8inch flour tortillas
1/2-cup sour cream
Extra salsa for topping


In a medium bowl, combine beans, corn, salsa, coriander, and jalapeno peppers
Divide mixture evenly among tortillas
Add 2-tbsp grated cheese to each tortilla
Fold up bottom of tortilla, and then fold in sides
Place 2 tortillas, seam side down, on a microwave-safe plate
Microwave on high for 60-75 seconds or until heated through
Serve with sour cream and extra salsa
