GLUTEN FREE RECIPE: G.F. Delicious Pie Crust

1-1/2 cups white rice flour
1/2-cup cornstarch
1/2-cup tapioca starch
1/4-cup potato starch flour
1/2-lb. Lard
1-tsp salt
1-tsp xanthan gum
1-tsp baking powder
1-egg and 1-tsp vinegar in cup filled to 1-cup line with water

Mix all dry ingredients
Add lard, cut into pieces
Mix with hands until lard is in little pieces (oatmeal size)
Mix egg, vinegar and water together
Make a well in centre of lard mixture and pour in 3/4 egg mixture
Mix with fork until all dry mixture has been absorbed
Add a little more egg mixture if the crust feels a bit dry
Chill in fridge overnight for best rolling qualities.

This pie crust recipe can be doubled
Use 1/2 and freeze remainder. Great for tarts as well.
