GLUTEN FREE RECIPE: G.F. Ice Box Cookies


1 egg
1/2 cup butter or shortening
1 cup brown sugar
1 tsp vanilla
1/2 cup walnuts
1/2 cup rice flour
1/4 cup cornstarch
1/4 cup arrowroot flour or soy
1/2 cup potato flour (not potato starch)
1/2 tsp salt

Cream butter, sugar and egg. Add sifted dry ingredients and nuts. If dough not
stiff enough add a little more flour. Shape into a roll, wrap in wax paper,
chill until it holds shape, (approx 1 hour) Cut in 1/8" slices and bake at 350
for 10-15 minutes. These can be frozen in the roll.
