FREE RECIPE:
GF Grilled Chicken Mandarin Salad with Sweet & Sour Dressing
Sweet & Sour Sauce
½-cup vegetable oil
2-tbsp granulated sugar
2-tbsp white vinegar
2-tbsp snipped fresh parsley
¼-tsp salt
Pinch of freshly ground black pepper
2-3 drops hot sauce

Salad
6oz- baby spinach
1-cup sliced celery
¼-cup thinly sliced green onions
1-10oz can mandarin orange segments, drained
4-chicken breasts, grilled and cut into 1/4inch strips

Caramelized Almonds
½-cup slivered almonds
2-tbsp granulated sugar
Dressing
In a small bowl, whisk together oil, sugar, vinegar, parsley, salt, pepper, and hot sauce
Set aside for at least 1-hour
Refrigerate up to 3 weeks
Caramelized Almonds
In a small frying pan, cook almonds and sugar over medium heat, stirring constantly, until sugar is melted and almonds are coated and lightly browned
Set aside to cool, and then separate
Salad
In a salad bowl, toss together spinach, celery, green onions, and mandarin oranges
Pour dressing over the salad and toss lightly
Top with grilled chicken strips
Sprinkle with caramelized almonds
