GLUTEN FREE RECIPE: G.F. Carrot, Fruit, & Nut Muffins


2/3 cup each; rice flour, Soya flour and corn starch
1/2 tsp salt
2 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 1/4 cups white sugar
2 cups grated carrot
1 shredded apple, with skin
1/2 cup each raisins, walnuts and coconut
4 eggs, well beaten
1/2 cup oil and 1/2 cup applesauce
2 tsp vanilla


    Mix dry ingredients. Add liquids; fold in carrots, apple, raisins, walnuts and coconut as you have prepared them, Do not overmix. Place in muffin tins. Bake at 350 F. for 20 to 25 minutes. Makes 14 muffins.
