FREE RECIPE: G.F. Carrot Bran Muffins
1-cup rice flour
1-1/2 cups millet or bean flour
1 1/2 tbsp baking powder
1/2 tsp salt
1 tbsp cinnamon
2 tsp xantham gum
2 cups rice bran
4 eggs
1 1/2 cups vegetable oil
1 1/4 cups dark brown sugar
1/4 cup molasses
3 cups finely grated carrots
1-cup raisins
Preheat oven to 325 F
Grease muffin pans
Combine flours, baking powder, salt and xantham gum
Add bran and set aside
Combine in a separate bowl beaten eggs, oil, sugar and molasses
Add carrots, raisins, and flour mixture
Mixing just to moisten
Fill greased muffin pans nearly full
Bake at 325 F for 30 minutes
Yields about 20 muffins.
