RECIPE: Sugar Pie with Raisins
Pastry for 9" pie
2-cups brown sugar; packed
2-tbsp flour; all purpose
1-cup raisins (optional)
Roll out pastry and fit into 9" pie plate, trim and flute edges
In bowl, blend sugar, flour and salt
In separate bowl using electric mixer, beat eggs and yolk until frothy
Beat in milk and vanilla.
Stir egg mixture into sugar mixture until smooth
Sprinkle raisins into bottom of pie crust
Pour sugar mixture into pie crust
Bake in 400* oven for 10 minutes
Reduce to 350* and bake for 35 minutes or until crust is golden brown and filling is set
Let cool on rack.
