DESSERT RECIPE: Carrot Cake

Cake:
2-1/4-cups flour
2-tsp baking soda
2-tsp cinnamon
1-tsp baking powder
1-tsp salt
1-1/2 cups sugar
3-eggs
1-tsp vanilla
1-cup vegetable oil
2-cups finely grated carrots
1-can crushed pineapple
1-cup raisins
1-cup chopped walnuts
Cream Cheese Icing:
1-(250g) cream cheese, softened
1-tsp vanilla
2-cups icing sugar

Cake:
Preheat oven to 350*
Grease 13x9 inch baking pan and line with parchment paper (base)
Stir together flour, baking soda, cinnamon, baking powder, and salt in a medium bowl
In a separate bowl, using mixer, beat sugar and eggs on high until thick and pale yellow
Beat in vanilla, and then oil
Stir dry ingredients into egg with carrots, pineapple, raisins, and walnuts
Spoon batter into pan
Bake 40-45 minutes, until toothpick comes out clean
Let cool in pan on wire rack 15 minutes
Remove from pan and let cool completely

Icing:

Beat cream cheese and butter with mixer until light and fluffy, then beat in vanilla
On low, beat in icing sugar
Spread over cake
