CANNING
RECIPE:
Green Hot Sauce
1-lb
chopped jalapeno peppers, stemmed and seeded
2-cups vinegar
2-tsp kosher salt
1-tsp white sugar
Combine all ingredients in a large pot over medium-high heat
Bring to a boil and boil for 5 minutes
Let cool and puree in a blender
Return to pot and cook over medium heat for 5-7 minutes
Put in hot sterilized canning jars
Place in a cool dark place to mature for 2-3 months
Makes 2 cups
